Meet your One Pot Winter Wonder WINNERS

Over the last three months, our plates have been full of many hearty and delicious one pot winter wonder pork recipe entries.

From stews to soups, to curries and roasts - we've been spoiled for choice with recipes worth bookmarking for a quick and delicious winter pick-me-up. But, the time has come to choose the overall winners.

Two of the lucky entrants have been chosen by SA Pork judges to walk away with the exciting prize - each will receive an Instant Pot worth R2,000. A prize that will allow these home chefs to keep on cooking wondrous, inspiring, and tasty dishes.

Andre Bester who shared the tasty Sticky ginger and lemongrass pork fillet recipe

Ingredients

  • 500g pork fillet
  • 10ml sesame oil
  • 2cm grated ginger
  • 1 lemongrass stalk finely chopped
  • 1 clove of garlic crushed
  • 400g egg noodles
  • 100ml orange juice
  • 250g broccoli stems, blanched
  • 100g fine green beans, blanched
  • 125g sugar snap peas, blanched
  • 30ml sesame seeds toasted

Method:

  1. Place pork in a bowl.
  2. Mix sesame oil, ginger, lemongrass and garlic.
  3. Rub over pork fillet and marinate for 1 - 2 hours.
  4. Cook noodles, drain and keep ward.
  5. Heat a nonstick pan and sear pork all over medium heat. Set aside to rest.
  6. Deglaze the pan with orange juice.
  7. Add noodles to the juice and stir-fry for 3 - 4 minutes.
  8. Slice pork and serve with noodles and vegetables and sesame seeds.

Ingredients

  • Pork Fillet - About 500g
  • Oil
  • 1 onion
  • 2 tablespoons tomato paste
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 2 tablespoons thyme
  • 1 can of crushed tomatoes
  • Water as required
  • Parsley
  • Teaspoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon mixed dried herbs
  • Pinch garlic and onion powder
  • Half cup dried apricots

Method

  1. Slice fillet into cubes and brown.
  2. Remove and in the same pot, add onion and garlic.
  3. Add the paste and fry for a few minutes.
  4. Add tomatoes, herbs and wine.
  5. Cook for a few minutes then add the pork and remaining ingredients.
  6. Reduce the heat and simmer for an hour and a half.
  7. After the cooking time has elapsed, remove from the heat, add more water if needed and stir.
  8. Serve with a creamy potato mash and enjoy...
